Ingredients (Serves 2)
The Base
1 head iceberg lettuce, cut into wedges
Fresh cracked black pepper
Small pinch kosher salt (for seasoning the lettuce)
The Star
4 oz thick-cut or slab bacon (about 2 thick slices), cut into large pieces
Fresh + Bright
½ cup cherry tomatoes, halved
2–3 tablespoons pickled red onions (store-bought is perfect)
Lightened-Up Blue Cheese Dressing
¼ cup Greek yogurt (2% or full-fat)
1½ tablespoons light mayonnaise
1½ tablespoons buttermilk (or regular milk)
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1–2 tablespoons blue cheese crumbles
Kosher salt and black pepper, to taste
How to Make a Steakhouse Wedge at Home
1. Cook the Thick-Cut Bacon (Low and Slow)
Start the bacon in a cold pan over medium-low heat.
Cook slowly, flipping occasionally, until the fat renders and the bacon is deeply golden with crisp edges.
Transfer to paper towels and let it cool slightly, then cut or break into chunky pieces.
Why this matters:
Low and slow cooking renders the fat properly and gives you that steakhouse-style bite instead of burnt bacon bits.
2. Make the Dressing
In a bowl, whisk together the Greek yogurt, mayo, buttermilk, lemon juice, Dijon, blue cheese, salt, and pepper until smooth.
Taste and adjust seasoning as needed.
Refrigerate while you prep the rest — even a few minutes helps it tighten up.
3. Prep the Lettuce (Don’t Skip This)
Cut the iceberg into wedges, rinse briefly, and dry very well.
Cold, dry lettuce is the entire point of a wedge salad.
Right before plating, season lightly with:
A small pinch of salt
Fresh cracked black pepper
This makes the lettuce taste good on its own, so you don’t need to drown it in dressing.
4. Assemble Like a Steakhouse
Place each wedge on a plate.
Lightly spoon or drizzle the dressing over the top — less than you think you need.
Finish with:
Thick-cut bacon pieces
Cherry tomatoes
Pickled red onions
Extra blue cheese crumbles if you like
Crack a little more black pepper over the top and serve immediately.
Dry January Drink Pairing (Optional, But Recommended)
If you’re keeping things alcohol-free but still want a ritual:
Sparkling water
Fresh lemon or lime
A couple dashes of non-alcoholic bitters
Lots of ice
It’s crisp, slightly bitter, and perfect with salty bacon.
