Honey-Cajun King Salmon
Whether you are charring a cedar plank over lump charcoal or getting those deep, caramelized grill marks inside on a cast iron pan, this recipe delivers a sticky, mahogany-glazed crust over rich, buttery King salmon.

Ingredients
1. The King Salmon & Cajun Rub
2 Wild Fork Skin-On King Salmon portions (~6–8 oz each, fully thawed)
1 tsp High-smoke-point oil (avocado or canola oil, applied to the fish)
1 tbsp cajun seasoning
1/2 tsp Smoked paprika
1/4 tsp Dried thyme or oregano
Note on Fish Selection: We are using King salmon (Chinook) for its incredible natural fat content and thick, steak-like flakes that stay juicy under high heat. If you're using Atlantic salmon, it works as a great budget-friendly alternative. If using leaner wild Sockeye, pull it 2 minutes earlier to prevent drying out.
2. Fortified Honey-Cajun Compound Glaze
3 tbsp Raw honey
3 tbsp Unsalted butter, melted
1 tbsp Whole-grain Creole mustard (or Dijon)
1 tbsp Fresh lemon juice
1 tsp cajun seasoning
1 clove Garlic, microplaned (grating prevents burning while emulsifying the glaze)
1/2 tsp Worcestershire sauce
Dash of Louisiana hot sauce or cayenne
1/4 tsp Liquid smoke (optional, if cooking indoors without cedar wood smoke)
3. Garlic-Herb Rice (Recommended Side)
1 cup Long-grain Basmati or Jasmine rice (rinsed cold until water runs clear)
1.75 cups Low-sodium chicken broth
1 tbsp Butter or olive oil
2 cloves Garlic, microplaned or finely minced
1/2 tsp Kosher salt
Zest of 1/2 lemon + 2 tbsp fresh flat-leaf parsley, finely chopped
Step-by-Step Instructions
Step 1: Cook the Garlic-Herb Rice
In a medium saucepan, melt 1 tbsp butter over medium heat. Add the microplaned garlic and stir continuously for 30 seconds until fragrant and sizzled (do not let it brown).
Add the rinsed rice and toast in the butter for 60 seconds, coating every grain.
Pour in chicken broth and salt. Bring to a rolling boil, then drop heat to low, cover tightly, and simmer for 15 minutes.
Remove from heat, let stand covered for 5 minutes, fluff with a fork, and fold in lemon zest and fresh parsley.
Step 2: Prep the Salmon & Emulsify the Glaze
Pat the salmon portions thoroughly dry with paper towels—removing surface moisture is critical for crisp skin and seasoning adhesion.
Lightly coat both the skin and flesh sides with 1 tsp high-smoke oil. Rubbing oil on the fish directly rather than pouring it into the grill pan prevents smoke from pooling in the ridges.
Coat the flesh side and edges evenly with 1 tbsp cajun seasoning, smoked paprika, and dried thyme. Press gently so the rub adheres.
In a heat-safe bowl, whisk melted butter, raw honey, Creole mustard, lemon juice, 1 tsp cajun seasoning, microplaned garlic, Worcestershire sauce, hot sauce, and liquid smoke until smooth and emulsified into a thick, glossy lacquer.
Step 3: Sear Flesh-Side First for Hero Grill Marks
Adjust your oven rack 4 to 6 inches below the broiler heating element and preheat the Broiler to High.
Set your dry cast iron grill pan on the stovetop over medium-high heat for 4 to 5 minutes until smoking hot.
Lay the salmon flesh-side down at a 45-degree angle across the raised ridges. Press down lightly for 3 seconds so the meat makes solid contact with the hot iron.
Sear undisturbed for 2 to 2.5 minutes. You will smell toasted spices and see dark, charred seasoning lines forming where the fish meets the ridges.
Step 4: Flip, Glaze & Sizzle
Slide a thin metal spatula along the ridges, carefully flip portions skin-side down, and let the skin crisp against the iron for 2 minutes.
Turn off the stovetop burner.
Heavy-brush 3/4 of the fortified honey-butter glaze over the grilled top crust. Watch as the excess glaze drips down into the hot pan valleys, creating an immediate rush of sweet, garlic-butter steam.
Step 5: High-Broil Glaze Flash
Transfer the entire grill pan into the oven under the High Broiler.
Watch closely through the oven window as top-down radiant heat causes the raw honey and mustard to bubble violently into a tacky, dark mahogany shell.
Pull the pan as soon as an instant-read digital thermometer inserted into the thickest part reads 125°F–130°F internal (approx. 60 to 90 seconds under the flame).
Step 6: Rest & Plating
Let the salmon rest in the pan or on a warm plate for 2 minutes. Carryover heat will bring the center to a silky medium finish at 135°F.
Brush the remaining warm glaze over those crispy grill lines for a mirror-shine gloss.
Serve directly in the cast iron skillet garnished with charred lemon wheels and fresh chopped parsley over a bed of fluffy garlic-herb rice.
