Gourmet "Wrap Snack™" (McDonald's Snack Wrap Glow-Up)
If McDonald's won't give the people what they want, we will. This air-fried, bacon-brushed, homemade Wrap Snack™ is crispy, flavorful, and shamelessly better than anything from the drive-thru.
Ingredients
Chicken & Marinade
1 lb chicken tenderloins (or slice chicken breasts into strips)
1 cup buttermilk
1 tsp Dijon mustard
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp kosher salt
1/4 tsp white pepper
Seasoned Flour
1/2 cup all-purpose flour
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional)
1/2 tsp kosher salt
1/4 tsp black pepper
Egg Wash
1 egg, beaten
Seasoned Panko
1 1/2 cups panko breadcrumbs
2 tbsp grated Parmesan
1 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp cayenne pepper (optional)
Zest of 1/2 lemon
Pinch of kosher salt and pepper
For Cooking
Cooking spray (avocado or canola oil)
Bacon & Tortilla
4 slices thick-cut bacon, halved (8 half-strips)
4 flour tortillas (6- to 8-inch, depending on chicken thickness)
Reserved bacon fat (1–2 tbsp, for brushing)
Tangy Honey Mustard Sauce
1/4 cup mayo
1 tbsp Greek yogurt or sour cream
1 tsp Dijon mustard
1 tsp honey
1 tsp white vinegar
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
Wrap Toppings
Chopped romaine or baby greens
Shredded cheddar or shaved Parmesan
Pickled red onions or cucumber ribbons (optional)
Drizzle of hot honey (optional)
Pour Choice
Lambrusco (or another light sparkling red wine)
Instructions
1. Marinate the Chicken
Combine buttermilk, Dijon, garlic powder, paprika, salt, and white pepper. Add chicken tenderloins and marinate for at least 1 hour (or overnight).
2. Prepare the Breading Station
Set up three bowls:
Bowl 1: Seasoned flour
Bowl 2: Beaten egg
Bowl 3: Seasoned panko (mix well and toast lightly in a skillet for added color and crunch, optional)
Dredge each chicken strip: flour → egg → panko. Let sit for 10–15 minutes to hydrate and lock in the crust.
3. Air Fry the Chicken
Preheat air fryer to 400°F. Spray chicken lightly with oil. Cook in a single layer for 12–14 minutes, flipping halfway through, until golden and 165°F internal.
No air fryer? Bake at 425°F on a wire rack over a baking sheet for 20–25 minutes, flipping halfway, until crispy.
4. Cook the Bacon & Prep Tortillas
Cook bacon using your preferred method until crispy. Reserve 1–2 tbsp of rendered bacon fat.
Brush the inside of each tortilla with bacon fat and warm fat-side down in a dry skillet until soft and fragrant.
5. Make the Sauce
Whisk together all sauce ingredients. Chill for at least 30 minutes before serving.
6. Assemble the Wrap
Start with the bacon-fat-brushed tortilla. Add a layer of sauce, romaine or greens, chicken strip(s), a crispy bacon strip, cheese, and optional extras like pickled onion or hot honey.
Fold it like a wrap. Or a taco. We don’t judge.
7. Pair & Serve
Serve with a chilled glass of Lambrusco. Sit down. Eat it like you’re not in a drive-thru.
